Founded in 1875 (Meiji 8). It all began when Hikozaemon Iiyoshi first brewed sake with high-quality spring water that never ran out. The Saruhashi district of Myoko City, where Ayu Masamune is located, is one of the most heavily snowed areas in Niigata Prefecture.
In the pure mountain gorge blessed with snow and water, the brewers put their hearts into making amazake.
