Refreshing! Amazake pickles
 Amazake pickles are perfect for recharging energy and recovering from fatigue thanks to the effects of the citric acid contained in vinegar and the glucose and B vitamins contained in amazake.
 By using amazake instead of sugar, the nutritional value and deliciousness are improved! 

- About 20 minutes (including half-day marinade)
Ingredients (for about 4 people)
- your favorite vegetables
- about 300g
- Sweet Sake
- 200cc
- vinegar
- 100cc
- salt
- 1 teaspoon
- onion
- 30g
- Laurier
- 1 sheet
- chili pepper
- One
- grain black pepper
- 5 grains

Using amazake also enhances the umami of the ingredients. It will be a pickle that you can enjoy mellow sourness and sweetness.
how to make
- 
Sterilize the container with hot water and let it cool. 
- 
 Cut your favorite seasonal vegetables (cucumber, celery, paprika, cherry tomatoes, okra, etc.) into bite-sized pieces, sprinkle with a little salt (not listed), and rub all over.  
- 
Place the vinegar, salt, wedge-cut onion, and spices in a pot and bring to a boil. Turn off the heat, and when the heat is removed, add amazake and mix.

Leave ② for about 10 minutes, and when it becomes soft, discard the water and put it in a storage container.  
- 
Pour ③ into a storage container and marinate in the refrigerator for at least half a day.
