Japanese leek
shimeji mushrooms
1/2 pack

A chicken wings
A sake
1 tablespoon
A Shio Koji
2 tablespoons
A Soy Sauce Koji
1/2 tbsp
A garlic koji
1 teaspoon
A Sesame oil
1 teaspoon
AGlutinous rice (or white rice)
1 tablespoon
A white sesame
moderate amount


By using koji seasoning, which is a fermented food, the umami of meat and vegetables will be enhanced.

how to make

  • Cut the white part of the green onion diagonally, mince the ginger, and loosen the shimeji mushrooms.

  • Add A, ① and the green part of the green onion to the pan and heat.

  • When it boils, lower the heat and simmer for about 40 minutes, skimming off the scum.

  • Finally, taste it and add a small amount of hot water if it seems too strong.
