Amazake is also a good companion because it is a processed food that uses the fermentation action of fungi.

By the way, why May 15th?

It seems that the origin is a pun that combines May = English, reading May in Roman letters (mai) and reading 15th (Igo). Established in 2009 by the Japan Mushroom Meister Association based in Nakano City, Nagano Prefecture. Punning is very Japanese, isn't it?

Originally, it was established with the aim of promoting the mushroom industry and helping many people to become healthy by eating mushrooms. The scope of anniversaries is broad.


Well, it's the anniversary of fungi and fermented foods, so I thought of a recipe that would be perfect for such a day.

Mushroom sweet rice malt (for 2 or 3 people)


Mushrooms of your choice (2 or 3 types are even better) 2 tsp sesame oil, 1.5 tbsp miso, 2 tbsp amazake (concentrated type), 2/3 tbsp sake (enhanced flavor and spread miso) For)

≪How to make≫

1. Chop your favorite mushrooms into appropriate sizes, place them on aluminum foil, and sprinkle sesame oil evenly over the top.

2.Mix the miso, amazake and sake and sprinkle evenly over the mushrooms.

3. Fill the grill with water and bake on low heat for about 5 minutes. Finally, add finely chopped green onions and sesame seeds to your liking.

You can also bake it in a frying pan instead of on the grill.
