Hello, this is Ren MURO Kagurazaka, a store specializing in rice malt and amazake.

At our shop, we carefully select amazake made by breweries who are particular about water and rice from all over Japan.

This time, we visited “Koji Wadaya”, which has been making koji for over 100 years in Motomiya Town, Fukushima Prefecture.

Kojiwadaya is located in an environment blessed with nature between Mt. Adatara and the Abukuma River.

Affection for koji, handiwork of craftsmen

“Koji” is life for Kojiya.
The koji mold that works is precious.

The soft, sweet scent and the warm, humid air.
The “muro” where koji was brewed was a sacred place.

In the room, I carefully put my hands on it, and watch the temperature and brew it with love every day.
The work of stirring koji is actually more labor than you can imagine.
It seems that only a limited number of craftsmen can do this important process that requires physical strength.

Our original “Sukkiri Amazake” is a popular product prepared by Koji Wadaya.
As the name suggests, it has a refreshing acidity and a clean taste, making it easy to drink and drink every day.

This time, from filling the amazake into bottles, capping and labeling.
We also observed how each product is carefully made one by one in the clean and tidy factory.
