However, there are various types of sweet sake that we are currently handling at our store. The introduction has become long, but this time I would like to explain the general types of our store's rice koji amazake.

 

①Junmai amazake

The most popular amazake made from only white rice and rice koji.

As simple as it is, it is affected by various factors such as the quality of the rice, rice malt, water, how it is made, the fermentation place, temperature, and time. .

In addition, the amount of water, the size of the grain, and whether it is straight or concentrated will also change, so the skills of the creators who have been making it for many years and maintain the same quality are truly craftsmanship.

You can enjoy the difference in amazake made by craftsmen, or you can make it at home, and the taste will change every time.

②Brown rice amazake

Made from brown rice and rice malt, it is a popular rice malt amazake along with Junmai Amazake.

However, there are few stores that carry it, and I think it is rare to find a store that has a variety of brown rice amazake like our store.

In fact, there are very few rice malts that are made from brown rice (because the outer layer of brown rice prevents the koji mold from breaking down the starch in the rice, making it difficult for the koji mold to propagate). Mostly.

Because it contains brown rice nutrients (vitamin B1 , vitamin E , dietary fiber, etc.), it is more nutritious than pure rice amazake.

As for the taste, the aroma and the richness of brown rice are different from pure rice, so it is recommended to try it compared to pure rice.
