The brewery introduced in the 7th installment is "Senjo", which is popular for its cute label and authentic amazake.
“Senjo” is popular for sweet sake with a cute label and authentic taste. It was founded in 1866 and has a warehouse in Ina City, Nagano Prefecture. We have been involved in fermentation culture and Japanese sake making, and have walked together with the region through a turbulent period of about 150 years since the Edo period.
By spreading traditional fermented rice food to the younger generation who have little connection with fermented food, we will pass on the culture of koji and fermented rice to the next generation.
In 1984, in search of a larger piece of land, we moved our rice milling and brewing base to Kamiyamada, about 5 km away from Nishi-Takato, Takato-cho, where we were founded.

■ I want to make use of fermentation technology without being particular about sake
In the past, they focused on selling sake, but the popularity of Doburoku, which they made in 2011, prompted the 6th generation president, Mr. Kurogouchi, to say, “We are not limited to sake, but rather we are applying this traditional fermentation technology to various products. I want to go."

Amazake was commercialized in 2005, and it gradually became popular around 2011. Amazake became so popular that production could not keep up with it.
Since our main business is sake production, we are particular about rice and water. The rice is polished to 70%, just like sake brewing, and the water used is high-quality underground water from Takato.
In addition to amazake made with 100% rice koji, we also made amazake with a sour taste using white koji, and amazake with rare sprouted brown rice.
There were various issues when Amazake first went on sale, but they have continued to make improvements to maintain the quality, and now they are aiming to acquire HACCP (World Standard Hygiene Management Certification).
There is also sprouted brown rice amazake, which is hard to find anywhere else. Germinated brown rice is brown rice that has been germinated by soaking in water for 1-2 days or longer. The sprout contains a lot of enzymes, GABA, and dietary fiber, and is characterized by being more nutritious and easier to digest than brown rice. Germinated brown rice, which is highly nutritious but takes a lot of time and effort, is used for about one-third of the total amount of this product, so you can expect more ingredients derived from germinated brown rice. In terms of taste, you can enjoy the aroma and grainy texture of soft sprouted brown rice.

■ Wishes for amazake making on the label
The cute label attached to Senjo's products is based on the motif of the grouse, the prefectural bird of Nagano Prefecture. The ptarmigan is now an endangered species, and one of the reasons for this is the increase in abandoned farmland.
The demand for sake and amazake (sweet sake) has increased, and the amount of rice produced has increased, reducing the amount of abandoned farmland.
